Every layer in these jars is filled with a different gut-loving ingredient, like brown rice and mixed beans, to boost your fibre intake.

Ingredients

For the dressing

  • 3 tsp date paste (2 dates blitzed in a food processor with 4 tbsp water)
  • 4 tbsp extra virgin olive oil
  • Juice from 1/2 lemon
  • a pinch of cumin & salt

For the salad

  • 1/2 large cucumber
  • 2 large tomatoes
  • 1 tin (400g) mixed beans (4 different types)
  • 1/2 zucchini, ribboned
  • 1/3 cup (50g) feta
  • 1/2 cup (120g) cooked brown rice or grain of choice
  • 2 cups (60g) spinach
  • handful of mixed seeds

Method

  1. Layer 1: Add the dressing
  2. Layer 2: Cooked rice - 1/4 cup (60g) per jar (or grain of choice)
  3. Layer 3: mixed beans, courgette/zucchini.
  4. Layer 4: tomatoes and cucumber.
  5. Layer 5: spinach & mixed seeds.
  6. Layer 6: feta, crumbled.
