Ingredients

Base

  • 1 watermelon

Berry whip spread

  • 100g blackberries
  • 100g ricotta
  • A touch of honey (to taste)

Choc hazelnut spread

  • 200g roasted hazelnuts
  • 100g dark chocolate
  • 1 1/2 tbsp extra virgin olive oil
  • 1 tsp vanilla extract

Toppers

  • Blueberries
  • Strawberries
  • Cherries
  • Seeds
  • Fresh mint
  • Pomegranate seeds (or whatever you have to hand)

Method

For the berry whip spread

  1. Blitz together until smooth.

For the choc hazelnut spread

  1. Blend the nuts in a powerful food processor for 10-15 mins until you have a smooth nut butter. Scrape in the melted chocolate and add the vanilla, then blitz for another few seconds until well-combined and glossy.

Assembly

  1. Simply cut your watermelon into triangles, get creative with your spreads and toppers and enjoy!
