Jammy love bites

Perfect for a special occasion or just a tasty treat! These gut-loving jammy love bites are moreish and indulgent yet full of fibre and prebiotics.

Ingredients

Berry Jam & Nut Butter Bites

  • 2 cups mixed berries, frozen
  • ½ cup chia seeds
  • ½ tsp rose water (or vanilla extract)
  • ½ cup cashew nut butter (or nut butter of choice)
  • 200g dark chocolate (or choc of choice)

Toppers

  • dried rose petals (optional)

Method

  1. In a bowl, add the berries, rose water and chia seeds, then microwave for 30-40 secs. Mash and stir until you have a jammy consistency.
  2. Line a tray with baking parchment and add spoonfuls of the jam with spaces between them. Freeze for 30 mins.
  3. Remove from the freezer and dollop cashew butter over each of them, spreading as evenly as possible. Place back in the freezer for 15-20 mins.
  4. Meanwhile, break the chocolate into pieces and place in a heat proof mixing bowl, then place over a saucepan of simmering water or heat in the microwave in 30-second bursts, stirring regularly until melted.
  5. Coat each bite in the melted chocolate, garnish and leave to set.
  6. These jammy bites are fridge-friendly once the chocolate has set. Store in the fridge for 3-5 days.
