These prebiotic-rich truffles are smooth, chocolatey, and deeply satisfying. Made with avocado and black beans for gut-friendly fibre and healthy fats, they’re a feel-good snack with a rich, fudgy bite. P.S If you want to follow along with Megan, check out her recipe video on Instagram here.
Ingredients
- 1 avocado
- 200g 70% dark chocolate, melted
- 1 x 400g tin black beans, drained and rinsed
- 1 tsp vanilla extract
- 2 x Medjool dates, pitted
- 1 tsp salt
Optional toppings
- 2 tbsp of nuts of choice, chopped (we used hazelnut)
- 2 tbsp cocoa powder
- 2 tbsp desiccated coconut
Method
- Add the avocado, dark chocolate, black beans, vanilla extract, medjool dates & salt to a blender & blitz for 1 min until it forms a smooth paste.
- Transfer to a bowl and leave in the fridge until the chocolate mixture has firmed up.
- Place coatings of choice in a small bowl.
- Scoop up a tablespoon of the chocolate mixture and roll into a walnut-sized ball, then place on a chilled plate and repeat.
- Once all the mixture has been shaped into balls, roll in your toppings of choice. Serve and enjoy!
