Makes 2 jars

For the dressing:

3 tsp date paste (2 dates blitzed in a food processor with 4 tbsp water) 4 tbsp extra virgin olive oil Juice from 1/2 lemon A pinch of cumin & salt

For the salad:

1/2 large cucumber 2 large tomatoes 1 tin (400g) mixed beans (4 different types) 1/2 courgette/zucchini, ribboned 1/3 cup (50g) feta 1/2 cup (120g) cooked brown rice - or grain of choice 2 cups (60g) spinach Handful of mixed seeds


Layer 1

Add the dressing

Layer 2

Cooked rice - 1/4 cup (60g) per jar (or grain of choice)

Layer 3

Mixed beans, courgette/zucchini.

Layer 4

Tomatoes and cucumber.

Layer 5

Spinach & mixed seeds.

Layer 6

Feta, crumbled.
