Spicy miso mushroom burger

If you’re trying to sneak some more plant-based foods in but missing some of your comfort meals – this burger is a great alternative that’ll keep your gut bugs happy too.

Ingredients

Serves 2

2 portobello mushrooms 2 whole wheat buns, grilled 1 tbsp brown rice miso 1 tbsp sesame oil 1 tbsp sriracha 1 cucumber, cut into ribbons 1 carrot, grated 2 tsp apple cider vinegar 2 spring onions 2 tsp toasted sesame seeds 1 x avocado, cubed A pinch of chilli flakes Juice of half a lime Pickled gherkins (optional)

Method

Step 1

Preheat the grill to 200C

Step 2

Using a fork, mix the miso, sriracha and half of the sesame oil to make a paste and spread onto each side of the mushrooms.

Step 3

Add the grated carrot and cucumber ribbons to a large bowl and mix with the apple cider vinegar, remaining sesame oil and spring onions.

Step 4

Mash the avocado until it’s a creamy consistency, add the juice of ½ a lime and sprinkle with chilli flakes and sesame seeds.

Step 5

Grill the mushrooms for 5 minutes on each side and grill the buns for the last couple of minutes.

Step 6

Once they’re ready, take them out and assemble the burgers! Spread the avocado on each side of the buns, place the mushroom on top (grilled side up to keep all the juices in). Add the cucumber, carrot and gherkins (if using) and place the top bun on top.

Hi Julie, brown rice miso is a paste which I get in my local supermarket. If you can't get brown rise miso paste, you can use normal miso paste. I hope this helps and you enjoy the recipe! :)

That worked really well and it was quick. My avocados weren't ripe yet so I substituted with homemade hummus. It was great as is; I can't wait to try it with avo.

Definitely want to cook this as the ingredients look delicious. I use brown rice regularly and also miso soups, paste, can you advise what brown rice miso is, will I be able to get this at a store in Cornwall UK? Many thanks Julie

This was an absolute winner. Super easy to make and so tasty. The bonus was that the seeded rolls I used were made by a local sourdough baker. Another recipe that I will be making again!
