Anti-food waste carrot top pesto

Just like beetroot and cauliflower leaves, carrot tops are great to whip up and eat as a versatile and tasty sauce. Try this recipe with pasta, drizzled over roasted veg – or simply dip with crudites. A great fuss-free way to reduce your food waste at home.

If you’re out of carrot tops, you can swap for basil leaves instead to use them up before they wilt.

Ingredients

  • 1 cup carrot tops (or basil leaves)
  • 1/4 cup pine nuts
  • 1 garlic clove
  • 1/4 cup extra virgin olive oil
  • 1/4 cup parmesan cheese or nutritional yeast
  • Pinch of salt & pepper to taste

Method

  1. Simply whizz up all of the ingredients in a blender, serve and enjoy!
