Super Six pesto sandwich

This Super Six sandwich is packed with gut-loving ingredients. With a variety of plants, this recipe delivers an abundance of healthy fats, fibre, and antioxidants, nourishing your gut microbiome with every bite.

  • 4 slices of sourdough bread (wholemeal if available)


  • 70g basil
  • 30g mint
  • 70g cashews
  • 40g pumpkin seeds
  • 125ml of olive oil
  • 1 lemon, juiced
  • 50g of parmesan, grated
  • Pinch of salt


  • ½ can (115g) chickpeas, drained & rinsed
  • ½ can (115g) cannellini beans, drained & rinsed
  • 1 garlic clove, chopped
  • 1 tbsp tahini
  • ½ lemon, juiced
  • 2 tbsp extra virgin olive oil
  • ½ tsp paprika (plus extra to top)
  • Salt & pepper (to taste)
  • Wholegrain crackers for dipping

Additional fillings

  • Mixed salad leaves
  • Jarred cooked red peppers
  • Blackberries


  1. Add the pesto ingredients to a blender and blitz for 1 min until smooth. Season to taste.
  2. Add the hummus ingredients to a blender and blitz for 1 min until smooth. Season to taste.
  3. Spread a layer of the pesto onto one slice of bread and a layer of hummus over the other slice.
  4. Top the pesto slice with the salad leaves, peppers and blackberries or any of your favourite toppings.
  5. Finally, press the hummus-topped slice of bread on top of the sandwich.
